California's citrus season runs roughly November through May, with the heart of navel orange, mandarin, and grapefruit harvest in the winter months. Valencia oranges extend into summer, and lemons are picked nearly year-round across multiple cycles. The San Joaquin Valley, especially Tulare and Fresno counties, produces most of the state's fresh citrus.

Citrus growers guard against frost on cold winter nights using wind machines that mix warmer air down into the grove, along with irrigation and, less commonly, orchard heaters. Because fruit can be damaged below about 28 degrees for several hours, growers watch forecasts closely from November through February.
